So, I'm gonna give sturgeon a try soon.  I haven't fished this before, and I've never eaten sturgeon before.

What's the best way to clean and prepare this fish? Should I fillet it or steak it? I've seen sturgeon for sale before in steaks with the skin on, and I've seen fillets for sale skin off.

How should I cook it?  From what I've found here and other places on the net, seems like most people smoke sturgeon.  Others seem to saute in a skillet.

I’ll brainstorm all day, sturgeon is a smoking item for me with several washes for variety of flavors.  I’ve certainly explored other ideas but haven’t committed yet.  Da Russians make soup and I met a Ukrainian chap and they lean with some Arabic spices.  Technique though is what needs to be found.  I’d take cast iron with s & p and bacon fat and try some pieces in flour, some floured and breaded, some plain….do not over cook.  I would bleed and ikijime that puppy fo sho.  Again, I’m just brainstormin… :smt006

Thanks Eddie, always clutch with the ideas!  We have similar palettes, I think.  Found some of the recipes you've posted in previous seasons, gonna take some for a spin when I wrangle ol' diamond sides.  Will def some somez but probably try some a few different ways too.

I had a sturg dish at Le Papillon a few years ago.  They no longer feature it on their current menu, but their roasted chilean c bass sounds like a similar dish.  I recall my sturgeon was steak cut and i enjoyed chewing on the big ol cartilage on it.  served in a citrus beurre blanc on whipped potato bed, like the current c-bass.

I purchased some Sturgeon from a farm up in Oregon a few months ago.  We did the steaks on the cast iron, typical butter, S/P/Lawry's - was good. 

I still have 4 fillets in the freezer, have not yet decided how to cook them, want to try something different though. from above, I may need to call up a Ukrainian friend of mine, and ask for advice.

Great, now you've got me googling "рецепт осетрини" and plugging the results into google translate. I'll have to actually try catching a dino this year.

I had sturgeon at the Pelican Inn many years ago. It was a simple preparation as Eddie suggested for a starting point, and it was very good.
