Hank is a great guy. He lives here in Sacramento and is always ready to go do something outside. A few weeks ago we striper fished. If you don't have his book you should buy it. It is a great cookbook.

1.Squeezed lemons and limes , just enough to submerge fish(I do half and half)
2. Add finely chopped ginger
3. Add whatever fish you have and let it sit in the fridge for at least 30 minutes for fish too cook.
4.Add the following once fish has cooked:
-Chopped cucumbers (smaller pieces)
-Finely chopped Mint
-Finely chopped cilantro
-Diced tomatoes
-Chopped jalapenos (your call on keeping the seeds)
-Chopped onion (your call on color, I prefer red)
-Salt and Pepper
-Sriracha hot sauce (Your call on how much, I like a lot)
-Chopped green onions.

After adding all the ingredients give it a good mix then top it off with sliced avocados. Enjoy!
